There are some flavors that just scream spring and summer.
To me, lemon is one of those flavors.
Also included would be the flavor of watermelon, hot dogs (or any grilled foods), margaritas, crabs, any kind of ice cream.
But today, we are talking lemons.
They are bright, crisp and tart. The flavor of lemon is so refreshing and clean.
And these cookies take it to a whole new level. They are buttery, sweet and soft. And the powerful lemon flavor cuts through the rich buttery taste to create a cookie that is out-of-this-world delicious!
These soft, chewy cookies will make the perfect dessert for your next spring time get together or summer barbecue!
adapted from Anne’s Lemon Snickerdoodles
makes about 5 dozen cookies
- 2 sticks butter, softened
- 2 cups sugar
- 1 egg
- zest of 1 lemon
- 4 tbsp lemon juice (I used two lemons to get this amount)
- 1 tsp vanilla
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp baking powder
- Preheat oven to 350 degrees.
- In the bowl of an electic mixer, cream butter and sugar together until light and fluffy.
- Add egg, lemon juice, zest and vanilla. Mix until combined.
- In a separate bowl, combine flour, baking soda, salt, and baking powder.
- Add flour mixture to butter mixture and mix until combined.
- Refrigerate dough for 10 minutes.
- Roll teaspoons of dough into balls and place onto a baking sheet.
- Bake cookies for 8-10 minutes, or until bottoms are lightly golden brown.
- Allow cookies to cool on sheets for 1-2 minutes before removing to a wire rack to finish cooling.
- Store in an airtight container.
