We are just plowing through Peach Week, huh?!

In case you missed the memo, my backyard peach tree was ready for picking so I had a TON of peaches to use up.  Thus, this week, filled with peachy recipes, has been dubbed “Peach Week!”

So far, we have covered breakfast with our Peaches’ N’ Cream Smoothie and our Peach Muffins.  Now we are moving on to the savory side of this delicious fruit.

I have to say, I am a big fan of the sweet/savory combo and I love adding fruit to other wise savory dishes.

Pineapple on Hawaiian pizza?  I’m there.

Orange chicken?  Totally.

Peach chicken?  You better believe it.

My sweet husband, on the other hand, is not a fan.  He liked the chicken part of this dish, but not the peach part.  I sort of had a hunch that he would feel this way going in, but I had to give it a try.    Oh, well!  Can’t win them all right?

Peach Chicken

Makes 4 servings

  • 4 split chicken breasts
  • 1 tbsp brown sugar
  • 1/2 tsp dried ginger
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp soy sauce
  • 2 tbsp rice wine vinegar
  • juice of 1 orange
  • 2 cups peeled and sliced peaches


  1. Preheat oven to 350 degrees.
  2. Place chicken breasts in a casserole dish.
  3. Combine remaining ingredients until well mixed.
  4. Pour peach mixture evenly over the chicken breasts.
  5. Bake chicken for 30-40 minutes, until chicken is cooked through.
  6. Serve chicken breast with peaches and drizzle with sauce.
